Spruce Tip Salted Crispy Chicken Thighs
Roasted Vegetables on Garlic Toast with Goat Cheese
Dinner last night. Instead of pickling the last of the Spruce Tips, I turned them into a flavoured salt. Very, very please with the taste of the salt. I used it as a rub and a finishing salt on crispy chicken thighs.
A combination of eggplant/onions/tomatoes/peppers and garlic shoots. Roasted in a hot oven (450F) for about 20-30 minutes, starting with the eggplant/onions, adding the tomatoes about 10 minutes later and the peppers/garlic shoots at the very end.
Garlic toast, toast bread, rub all over with a clove of garlic. The goat's cheese was tart and creamy, a lovely addition to the open faced (sort of) sandwich.
